Barceló Coconut Island Phuket announces the appointment of culinary expert Marco Jacoby as its new executive chef. With more than 20 years of global experience, Marco brings innovative ideas and a passion for exceptional flavours to the resort’s dining offerings.

Marco’s career spans luxury properties worldwide, including Barceló Whale Lagoon and Barceló Nasandhura in the Maldives, where he played a key role in leading culinary teams and supporting the successful launch of both award-winning resorts. At Barcelo Hotel Menorca, he introduced signature dishes and worked closely with local producers to showcase seasonal ingredients and regional culinary traditions.

Inspired by Mediterranean cuisine and Asian flavours, Marco focuses on authenticity, modern techniques and sustainable practices. His background also includes experience in the Michelin-starred kitchens of The Ritz London and collaborations with renowned chefs such as Diego Gallegos.

At Barceló Coconut Island, Marco will oversee the culinary direction of four key outlets: Kabana restaurant offering global cuisine, Kucina featuring Italian classics, Koko presenting refined Japanese dining, and the newly opened Laku Beach Club serving tapas and fresh seafood by the ocean. Guests can look forward to elevated dining experiences and curated gastronomic events that blend local heritage with international flair.
