An urban retreat framed by horizon‑to‑horizon views, 137 Pillars Suites Bangkok unveils its newest signature culinary experience, The Art of Japonisme, inspired by the 19th‑century movement in which Japanese aesthetics profoundly shaped Western art. From 1 June 2026 – 31 May 2027, the contemporary exploration of Japanese sensibilities, expressed through the meticulous craftsmanship of French pâtisserie, will be served at the hotel’s exclusive 26th-floor Baan Borneo Club, usually reserved for hotel guests.
The savoury tier spans a series of bite‑sized delights: tuna wrapped in compressed cucumber and crowned with Ikura caviar, finished tableside with a chilled kombu consommé; a crisp oyster topped with lime shoyu and ebiko caviar, presented in a charcoal shell; and a konnyaku‑infused prawn wrapped in fine somen and dusted with premium matcha. Ocean’s bounty finds its savoury counterpoint in seared Wagyu glazed in an umami‑rich teriyaki miso, complemented by aosa nori and Ossetra caviar.
The sweet selection is where French pâtisserie truly shines. In the fragrant yuzu mousse, bright citrus meets the gentle bitterness of matcha. A buttery hazelnut financier is taken East with kombucha ginger cream, while another timeless French classic, the Mont Blanc, reveals satisfying layers of almond sponge, whole chestnut, raspberry compote and maple Chantilly. Premium nama chocolate infused with roasted hojicha delivers a smooth, melt‑in‑the‑mouth finish, and signature scones receive a seasonal update with Hokkaido milk and Sakura cranberry, served with clotted cream and house‑made melon and peach honey jams.
“Like the 19th‑century Japonisme movement, our new collection is about discovering beauty in contrast and balance,” said Executive Chef Korawit Rungchat. “We approached Japanese flavours and French techniques with fresh eyes, finding new ways of seeing through craftsmanship.”
“The Art of Japonisme” afternoon tea is served daily from 12:00 pm to 5:00 pm from 1 June 2026 – 31 May 2027 at Baan Borneo Club. Prices range from THB 1,100++ per person with a selection of Araksa teas to THB 1,250++ with premium matcha beverages and THB 1,500++ with sparkling wine.
